Bisque de bogavante, pulpo con patata ahumada al pimentón y huevas de wasabi

Lobster bisque, octopus with smoked potato with paprika and wasabi roe

Inbetween:
Vieiras con puré de guisantes, zanahoria, chirivía y trufa de Piemonte
Scallops with pea puree, carrot, parsnip and truffle from Piemonte

Main course:
Magret de pato a baja temperatura con gel de remolacha, ruibarbo y trinxat de la Cerdanya
